I finally tried this recipe from Martha Stewart Living for Big Ginger Cookies.
I had some molasses to use up that had been in the cupboard awhile. These cookies are so good! Nice and chewy. I froze some of the dough, rolled into balls - didn't affect the cookies at all. I didn't use allspice or white pepper - just the powdered ginger (Penzey's!). I liked them like that - the other spices tend to get lost in the flavor anyway. Just chewy ginger molasses goodness. We don't even have any allspice since the cupboard purge (after the first Penzey's order).
Snack yesterday. Oops - didn't see that coffee sploosh on the counter.
